Laohucai: "Tiger vegetable"

Laohucai, or "Tiger vegetable" is common right across the north of China, though it is not made the same way by everyone. The ingredients are red onions, tomatoes and peppers, though it typically has leaf coriander (cilantro) as a garnish too. In some places the ingredients are lightly cooked, but I prefer it totally raw! I don't know what was wrong with the chef at the Tianshan restaurant that evening, as the ingredients are normally cut into fine slivers like the peppers here, and he forgot the coriander. Also the peppers that evening were too mild, I think. White rice vinegar with a touch of sugar as a dressing.
