Prawns, simply boiled

A simple dish of prawns, with a bowl of soy sauce with garlic and chilli to dip them in. The seafood in Xiamen is fabulous. Prawns are very much alive when you buy them in the market ... you have to take care they don't jump out of the bag on the way home! They are cooked in a number of ways, but people like them just like this, a nice contrast to the more complex flavours of other dishes. These ones were at a restaurant by a beach on Gulangyu Islet, 500 metres offshore from Xiamen Island.
