A favourite with the people of Xiamen is fried noodles. At a restaurant such as "Little Spectacles", most people eat Xiamen-style fried noodles rather than rice. The locals like very fine rice noodles. Fried with a bit of pork, shredded cabbage, carrot threads, a little mushroom ... this plate of fried noodles was the best I have ever had in Xiamen.
