The Xiamenese are generally reckoned to be the tops at steamed fish; this is one of the favourites: "Mandarin fish". Utterly succulent ... sea bass is an inferior substitute. You have to get to "Little Spectacles" early for dinner--by 5:30-6:00--or you'll have to wait ages for a table, and by the time you get there, most of what's good may well have been sold already. A basic wooden table is covered with a new sheet of plastic film for you. You dump your shells bones and other bits straight on the table. The plastic is just rolled up with all your waste when you're finished and thrown in the dustbin; a new sheet is then put down for the next customers.
