Being a little island and controlling some 300 square kilometres of sea area, Xiamen is well known for its seafood. An evening at "Little Spectacles", a seafood restaurant known to Xiamenese, but not to the average off-comer: absolutely no pretensions but fabulously fresh seafood, and only seafood, cooked to perfection. I am not sure what these are; they are like half-length razor clams about 2" long, but as you can see they have two siphons. Very meaty and absolutely delicious.
