One of the local specialities of Zhujiajiao--see "River Town" gallery--is a type of ham. I don't know exactly how it is produced, but it is coated in what looks almost like molasses, but which is flavoured with star anise and other spices. As a result it has a sweet flavour, which is the keynote of the Shanghai-style of cuisine. This shop specialises in Zhujiajiao hams. They seem just to use the shank end of the ham, the rest being put to some other purpose.
