A Hunanese interpretation of a Xiamen classic. Hunan, renowned for its extremely fiery food, is an inland province, and so scallops cannot be one of the real Hunan specialities. However, this excellent Hunan-style (Xiangcai, pronounced "hsiang-tsai") restaurant is in Xiamen, which is tops for seafood. So we have scallops, but using thicker rice noodles, rather than the very fine noodles preferred by the Xiamenese, and much more garlic than the Xiamenese would use. The Xiamenese also use more soy sauce and a bit of rice wine, and a little less oil.
