Hunan-style food is one of the styles that doesn't seem really to have gone outside mainland China. It is known particularly for extremely spicy dishes, such as the appetiser of pig's ear on the left--they eat all the pig bar the squeak here!--marinaded in oil liberally laced with very hot chillis and Szechuan pepper. The vegetable appetizer, some kind of celery, is also very spicy. On the other hand the wooden bucket contains the antidote, a delicious combination of glutinous rice cooked with pork spare-ribs, and garnished with spring onion.
