An absolutely delicious, extremely fragrant dish, but not for the faint-hearted. The cast-iron pot suspended over a solid-paraffin burner brought to your table contains a very spicy stew of beef offal, mostly liver and tripe, with chillis and other vegetables, peanuts ... and leaf coriander on top. I surprised myself by liking tripe for the first time in my life ... it's amazing what a good sauce will do!
