Fatter lamb for the hotpot. Three dishes like this were enough for four of us when combined with potato, frozen doufu, sliced rice-cake, Chinese cabbage and another sort of green vegetable whose name I don't even know in Chinese, let alone English! Surprisingly my companions didn't order any mushrooms or fungus of any kind; Chinese, particularly in this part, are avid fungus eaters ... there are about 40 varieties available in Xiamen, either fresh or dried! We also had some fish ... large white fish, cut in slices as thin as this lamb.
