Two types of meat: beef on the left, lamb on the right. In this restaurant--one of a big chain called "Little Fat Lamb"--the lamb is brought down from Inner Mongolia and is much better. You can have this lean meat or other with more fat in it. The meat is part frozen then shaved on a ham-slicer so that it is in thin pieces like you would have for Parma or Serrano ham, and cooks quickly. Soya beans "Mao dou" in the foreground.
